When it's hot out, soup is probably the last thing on your mind, however these chilled soups are the perfect antidotes to the heat. I first discovered cold soup (other than your traditional tomato gazpacho of course) on a sticky-hot summer day in Connecticut at a sweet little restaurant. There was a soup with cucumber, watermelon and mint on the menu that sounded unbelievably refreshing and exotic, and it was the tastiest thing I'd ever tried.
