This Cinco de Mayo we're looking to the lighter side of Mexican fare.  There's nothing better than chips and guac as far as I'm concerned, but the greasy fried corn chips can really weigh you down.  I like to swap out the chips for jicama and cucumber squeezed with lime and sprinkled with sea salt and chili powder for a guilt-free snack.  Check out the recipes below that are packed with flavor, not with calories, and have a happy Cinco de Mayo!
